If you’re not a fan of pecans, you can substitute them with walnuts, although we strongly prefer going with the first option. The pecans can be used crushed or cut – the bars will be delicious no matter what.
This simple recipe leaves a bit of space to get creative and even improve it! Here’s what you need to do:
Keto Peanut Butter Pecan Bars Recipe:
*2 cups of pecans (crushed or halved)
*½ cup coconut oil
*½ cup creamy peanut butter
*1 tablespoon vanilla syrup
*1 teaspoon vanilla extract
If you want the bars to be even lower in carbs, cut down the amount of pecans. We’d suggest going for the original recipe as it tastes better.
*Once you’re ready to start, divide the pecans into 4 dishes (1/2 a cup per dish).
*Now, mix the coconut oil and peanut butter in another cup, then warm the mix in the microwave so it melts.
*It’ll take no more than 20-25 seconds. Add the vanilla extract and syrup in the end and mix well.
*Next, divide this mixture into 4 parts and pour each one over the pecan cups. Stir everything together so it combines, then put the cups in the fridge.
*You can use small plastic containers and store-bought pecan halves.
*Mix the coconut oil and peanut butter next – you can use a glass cup with a pour spout for the process to go easier.
*Warm the mix in the microwave – go for 25 seconds and another 25 for a creamy texture. Add the vanilla extract and syrup and mix everything well.
*Divide the cup of the mixture into 4 pieces and pour it over the pecan cups. Mix well.
*Put the containers in the fridge so they can solidify, then take them out gently after a few hours.
