Take the example of everyday waffles: with the replacement of flour with almond and coconut flour, you can create waffles with a very low carb count. Not just that, but tasty as any regular waffle you can find, and delicious all the same.
I don't know about you, but having standard go to items for breakfast and desserts makes all the difference when you are on the keto diet. You don't want to be the total fitness freak to all your family, but instead you can fit in, and perhaps even make them a meal they enjoy.
The first time I crafted this recipe, my sister asked if she could have some, so I made extra, and she had no idea they were keto! They are delicious and nearly identical in nature to standard waffles, with the exception they have near zero carbs.
These fluffy waffles are a perfect start to the day that ends with beef and broccoli followed by keto brownies.
Soft Delicious Keto Waffles
Ingredients
- 3 tbsp Almond Flour
- 2 tbsp Coconut Flour
- 1/4 tsp Xanthan Gum
- 1/4 tsp Baking Soda
- 1/5 tsp Baking Powder
Wet Ingredients
- 1/4 cup Whole Milk
- 2 large Eggs
- 1 tsp Lemon Juice
- 1/8 tsp Salt
Instructions
- Whisk together the dry ingredients until combined.Beat the eggs, milk, and lemon juice until smooth.Combine the wet with the dry and mix. Let the batter rest while you heat the waffle iron. This helps the coconut flour absorb some of the moisture!Heat waffle iron to medium-high and spray with non-stick oil.Portion ¼ cup into each well (my iron has four wells) and close. Cook until golden brown.Repeat with remaining batter, about two more ¼ cup portions.Stack and serve with your choice of berries and syrup!
Other Notes
- If your waffle iron has 4 wells, fill the waffle iron once (all 4 wells) and then again with two wells for 6 small waffle slices total.
